one Press and spray starch an open, square napkin and accordionpleat the napkin from the bottom edge to the top edge. Starch and iron each crease as you fold so that the pleats are stiff enough to stand up like a concertina when the napkin is flat. Continue this way until the whole rectangle is pleated in sharp folds.

two Fold the pleated napkin in half, holding the pleats securely in place at both ends.

three Tie a ribbon around the fold, about 5 cm/2 inches from the bottom of the napkin, and fan out the pleats at the top. Display the napkin on a plate as desired.

This very simple fold works well with a floral-patterned napkin in a light, delicate fabric. There is no need to starch the napkin for this fold, as the desired effect is light and soft, rather than crisp. If using a floral fabric, opt for plain tableware in white, cream or pale pastel hues. A simple napkin ring is a good choice here so as not to distract from the napkin itself.
